| Preheat oven to 450° F. | |
| Sift together in a large bowl: | 1 3/4 C. all-purpose flour |
| 1/2 tsp. salt | |
| 1 T. baking powder | |
| 5 T. olive oil | |
| 1 C. milk | |
| 1/4 C. shredded Parmesan or cheddar | |
| or | |
| 1/2 C. raisins, currants or blueberries | |
| Stir for 1 minute (no more). Drop into large muffin tin (makes 12) or onto greased cookie sheet. Bake 10-12 minutes. Serves six. | |
